Промышленная переработка рыб сопровождается увеличением количества вторичных ресурсов и отходов, при этом общее количество отходов может достигать 60% от общей массы рыбы, что предполагает их переработку в коллагенсодержащие продукты.</p></sec><sec><title>Цель</title><p>Цель. Изучение возможности выделения коллагенсодержащей ихтиосубстанции из отходов рыбных ресурсов Астраханской области и изучение его качественных характеристик.</p></sec><sec><title>Материалы и методы</title><p>Материалы и методы. В качестве объектов исследования были выбраны: отходы от разделки частиковых видов рыб. Также объектами исследований являлась: коллагенсодержащая ихтиосубстанция, полученная по усовершенствованной технологии. При проведении экспериментов использовались общепринятые стандартные, а также модифицированные современные методы органолептических, физико-химических, микробиологических исследований.</p></sec><sec><title>Результаты</title><p>Результаты. На основании массового состава частикового сырья при разделке на филе обосновано использование в качестве сырья чешуи с кожей. Приведена технологическая схема получения коллагенсодержащей ихтиосубстанции. Способ выделения – измельчение образцов, варка при 65-80 0С с принудительным перемешиванием (18-20 об/мин), последующее фильтрование  и центрифугирование. Согласно полученным данным кислотность составляет в среднем 4,5, содержание сухих веществ составило 13 % и золы - 3,6 %, что позволит получить высокие показатели динамической вязкости и направить выделенный продукт на дальнейшие испытания для определения области применения.</p></sec><sec><title>Вывод</title><p>Вывод. Результаты исследования продемонстрировали возможным получение коллагеносодержащей ихтиосубстанции из кожи с чешуей щуки (Esox lucius) и судака (Lucioperca lucioperca). Полученный продукт обладает широким спектром свойств, подходящих для различных сфер деятельности. Оптимизированная технология дает выход продукта до 70% от массы сырья и обеспечивает высокую стойкость к микроорганизмам при длительном хранении. Совокупность физико-химических свойств дают основу для дальнейшего изучения с целью определения сферы применения. Материалы, получение которых представляется возможным с использованием ихтиосубстанции, являются экологически чистыми и биоразлагаемыми, поскольку в составе не использовались синтетические вещества.</p></sec></abstract><trans-abstract xml:lang="en"><sec><title>Background</title><p>Background. Industrial processing of fish is accompanied by an increase in the amount of secondary resources and waste, and the total amount of waste can reach 60% of the total fish weight, which implies their processing into collagen-containing products.</p></sec><sec><title>Purpose</title><p>Purpose. To study the possibility of extracting collagen-containing ichthyosubstance from the fish wastes of the Astrakhan Region and study its qualitative characteristics.</p></sec><sec><title>Materials and methods</title><p>Materials and methods. The following wastes from the separation of pelagic fish species have been chosen as the objects of studies. Collagen-containing ichthyosubstance obtained according to an improved technology was also used as an object of research. At carrying out of experiments generally accepted standard, and also modified modern methods of organoleptic, physico-chemical, microbiological researches have been used.</p></sec><sec><title>Results</title><p>Results. The use of scales with skin as raw material for filleting has been substantiated on the basis of the mass composition of the partial raw material. The technological scheme of obtaining collagen-containing ichthyosubstance is given. The method of extraction - grinding samples, cooking at 65-80 0C with forced mixing (18-20 rpm), followed by filtration and centrifugation. According to the data obtained the acidity is on the average 4.5, the dry matter content is 13 % and ash content - 3.6 %, which will allow to obtain high indices of dynamic viscosity and to send the separated product for further testing to determine the application field.</p></sec><sec><title>Conclusions</title><p>Conclusions. The results of the study demonstrated that it is possible to obtain collagen-containing ichthyosubstance from the skin of pike (Esox lucius) and pikeperch (Lucioperca lucioperca) scales. The resulting product has a wide range of properties suitable for various applications. The optimized technology gives a product yield of up to 70% of the weight of raw materials and provides high resistance to microorganisms during long-term storage. The combination of physico-chemical properties provides a basis for further studies in order to determine the scope of application.
