Традиционные химические методы не отвечают требованиям проводить исследования продуктов, поступающих на потоке в кратчайшие сроки.  Среди методов экспресс-анализа набирают популярность спектральные методы.  В настоящее время недостаточно изучен спектральный диапазон для определения срока хранения рыбного сырья.</p></sec><sec><title>Цель</title><p>Цель: Разработка экспресс метода оценки сроков хранения и свежести охлажденной радужной форели методом инфракрасной спектроскопии в среднем диапазоне и исследование возможностей современных методов математического анализа данных для создания точных и надежных аналитических методик.</p></sec><sec><title>Материалы и методы</title><p>Материалы и методы: Объектами представленных исследований явилась охлажденная радужная форель, а именно стейки, хранившиеся при +4 °C. Для определения срока хранения, свежести и качества использовался спектрометр ИК-Фурье в среднем диапазоне «ФТ-801» с использованием приставки нарушенного полного внутреннего отражения в диапазоне 4000–700 см-1 в течение 16 дней хранения.</p></sec><sec><title>Результаты</title><p>Результаты: Инфракрасная спектроскопия в среднем диапазоне позволила дифференцировать образцы радужной форели в зависимости от дня хранения. Каждому дню хранения соответствовал свой уникальный спектр. Диапазон 1700–1500 см-1 позволяет четко разделить образцы первого и последнего дня хранения стейков, а интенсивность поглощения увеличивается со временем хранения при длинах волн, соответствующих амидам и аминогруппам. Эти различия могут быть обусловлены биохимическими изменениями в образце вследствие порчи рыбы.</p></sec><sec><title>Выводы</title><p>Выводы: Результаты этого исследования могут быть использованы для разработки нового быстрого и неразрушающего метода оценки свежести рыбы, который будет иметь практическое значение для органов контроля безопасности пищевой продукции, для потребителей, которым важно знать качество употребляемой продукции. Разработанные методы имеют большой потенциал для предприятий пищевой промышленности как средство оптимизации процессов контроля качества продукции.</p></sec></abstract><trans-abstract xml:lang="en"><sec><title>Background</title><p>Background: In the agro-industrial sectors, including fisheries, there is a growing focus on rapidly determining the composition and quality of food products. Traditional chemical methods are too slow for quick quality assessments. Spectral methods have become preferred for rapid analysis, although the spectral range suitable for determining the storage days of fish samples has not been thoroughly explored.</p></sec><sec><title>Purpose</title><p>Purpose: To evaluate the shelf-life and freshness of refrigerated rainbow trout using mid-infrared spectroscopy.</p></sec><sec><title>Materials and Methods</title><p>Materials and Methods: Refrigerated rainbow trout steaks stored at +4 °C were examined. The fish were raised in an open tank at Lake Motkozero in the Vologda region. A mid-infrared FT-801 FTIR spectrometer with an attenuated total internal reflection (ATR) attachment was employed to determine the fish's shelf-life, freshness, and quality. The spectrum range spanned from 4000 to 700 cm-1 with a resolution of 4 cm-1, conducting 16 scans. Spectral data were analyzed using ZaIR 3.5 software, with measurements taken daily over a 16-day storage period.</p></sec><sec><title>Results</title><p>Results: Mid-infrared spectroscopy effectively differentiated rainbow trout samples by storage day, with each day displaying a unique spectral signature. The spectral range of 1700–1500 cm-1 clearly distinguished between samples from the first and last days of storage (day 16), showing an increase in absorption intensity at wavelengths corresponding to amides and amino groups, indicative of biochemical changes due to spoilage.</p></sec><sec><title>Conclusion</title><p>Conclusion: This study's findings contribute to developing a new, rapid, and non-destructive method for assessing fish freshness, which is crucial for food safety control authorities and consumers.
