Филе радужной форели представляет большую пищевую и биологическую ценность. Однако свежая рыба является скоропортящимся продуктом с ограниченным сроком хранения. Обеспечение высокого качества и безопасности свежей рыбы является актуальной задачей для переработчиков и поставщиков. Среди методов неразрушающего контроля качества метод рамановской спектроскопии имеет потенциал использования для обеспечения качества и мониторинга безопасности пищевых продуктов. Несмотря на свою эффективность рамановская спектроскопия остается в значительной степени недостаточно исследованной для оценки свежести и сроков хранения рыбной продукции. Данная работа восполняет недостающие знания в этой области.</p></sec><sec><title>Цель</title><p>Цель: Изучить возможность применения метода спектроскопии комбинационного рассеяния для оценки срока хранения и свежести филе охлажденной радужной форели, а также определить ключевые спектральные характеристики, которые позволяют отслеживать изменения качества продукта в процессе хранения.</p></sec><sec><title>Материалы и методы</title><p>Материалы и методы: В качестве объекта исследования использовалось филе охлажденной радужной форели, которое хранилось при температуре +2±2 °C. Определение срока хранения, свежести и качества проводилось с использованием рамановского спектрометра серии Nanoscope NS100 с длиной волны возбуждения 785 нм и рабочим диапазоном 100–3200 см-1. Измерения проводились в течение 16 дней холодильного хранения.</p></sec><sec><title>Результаты</title><p>Результаты: Результаты рамановского спектрального анализа показали различия в спектрах комбинационного рассеяния света в течении срока хранения, которые главным образом отражали степень окисления липидов. Наименьшая интенсивность наблюдалась для образцов свежей рыбы с 0 до 3 дня хранения, что позволяет дифференцировать эти образцы от других. В процессе анализа была выявлена флуоресценция образцов, которая создавала дополнительные шумы у спектров. Трехмерная математическая модель показала наибольший процент от общей дисперсии для охлажденной радужной форели (92 %).</p></sec><sec><title>Выводы</title><p>Выводы: Полученные результаты демонстрируют потенциал использования рамановской спектроскопии как основу для разработки методики экспресс-оценки и неразрушающего контроля качества и срока хранения рыбы. Данный метод будет иметь практическую значимость для органов контроля безопасности пищевой продукции и для потребителей. Для успешного применения метода необходима минимизация фонов флуоресценции, в том числе с использованием хемометрических методов, что позволит повысить точность прогностических моделей.</p></sec></abstract><trans-abstract xml:lang="en"><sec><title>Background</title><p>Background: Rainbow trout (Oncorhynchus mykiss) is among the most commercially important freshwater fish species worldwide. Rainbow trout fillets are recognized for their high nutritional value and beneficial biological properties. However, fresh fish is a highly perishable food with a limited shelf life. Ensuring consistent quality and safety of fresh fish products remains a critical challenge for processors and suppliers. Among non-destructive quality evaluation techniques, Raman spectroscopy emerges as a promising approach for quality and safety monitoring in the food industry. Despite its proven effectiveness, Raman spectroscopy remains significantly understudied for assessing freshness and shelf-life in fish products. This research gap was addressed by providing novel insights into the application of Raman spectroscopy for fish freshness monitoring.</p></sec><sec><title>Purpose</title><p>Purpose: To investigate the potential of Raman spectroscopy for assessing the shelf life and freshness of refrigerated rainbow trout fillets, and to determine key spectral characteristics that enable monitoring of product quality changes during storage.</p></sec><sec><title>Materials and Methods</title><p>Materials and Methods: The study object was refrigerated rainbow trout (Oncorhynchus mykiss) fillets stored at +2±2 °C. The shelf-life assessment, freshness evaluation and quality monitoring were performed using a Nanoscope NS100 series Raman spectrometer with 785 nm excitation wavelength and 100-3200 cm⁻¹ spectral range. Measurements were conducted during 16 days of refrigerated storage.</p></sec><sec><title>Results</title><p>Results: The Raman spectral analysis demonstrated distinct variations in the spectra of rainbow trout samples and corresponding to different storage durations, revealing lipid oxidation levels. The lowest intensity was observed in fresh samples stored for 0–3 days, enabling clear differentiation from other groups. Sample fluorescence was detected during the analysis, introducing additional noise to the spectra. The 3D mathematical model demonstrated the highest percentage of total variance (92%) for chilled rainbow trout.</p></sec><sec><title>Conclusion</title><p>Conclusion: The obtained results demonstrate the potential of Raman spectroscopy as a rapid-assessment and non-destructive monitoring techniques for fish quality and shelf-life evaluation. This method holds practical significance for food safety regulatory authorities and consumers.
