Белково-полисахаридные взаимодействия при переработке растительного сырья: технологические свойства и переваримость белка (критический обзор)

Аннотация

Актуальность. Расширение использования зернового, бобового, масличного и вторичного растительного сырья в белковых продуктах усиливает значение взаимодействий белков с клеточными полисахаридами и технологически добавленными гидроколлоидами. Эти взаимодействия определяют не только пищевую ценность, но и растворимость, водоудерживание, реологические свойства, гелеобразование, текстуру и устойчивость готовой продукции. Однако, технологические исследования часто ограничиваются функциональными показателями, а работы по переваримости используют очищенные компоненты и не воспроизводят структуру реального сырья.

Цель. Обобщить и критически осмыслить данные о том, как состав и структура растительного сырья, способы выделения белка и последующая обработка изменяют белково-полисахаридную матрицу, технологические свойства пищевых систем и доступность белка для пищеварительных ферментов.

Материалы и методы. Выполнен критический нарративный обзор публикаций, выявленных в PubMed, Crossref, Google Scholar и на платформах научных издательств. Поиск завершен 17 июля 2026 года. В аналитический корпус включены исследования и обзоры, связывающие характеристики растительного сырья или параметры его переработки со структурой белка и полисахаридов, функционально-технологическими свойствами либо переваримостью. Доказательства сопоставлялись по виду сырья, способу фракционирования, режимам обработки, составу матрицы, методам структурного анализа и конечным показателям.

Результаты. Совокупность данных не подтверждает возможность прогнозировать свойства продукта по общему содержанию белка и пищевых волокон. Сухое и мокрое фракционирование создают ингредиенты с различной чистотой, степенью сохранности природной матрицы и способностью к гидратации. Измельчение и умеренная тепловая обработка могут повышать доступность белка за счет разрушения клеточных стенок и инактивации ингибиторов протеаз, тогда как интенсивный нагрев, экструзия и сушка способны формировать плотные агрегаты и ограничивать ферментативный гидролиз. Влияние экструзии не имеет единого направления и зависит от влажности, температуры, механического сдвига, состава смеси и последующего измельчения продукта. Природные клеточные стенки и добавленные гидроколлоиды неэквивалентны, поскольку первые определяют пространственную доступность белка в сырье, а вторые изменяют свойства непрерывной фазы, вязкость и гелеобразование.

Заключение. Качество белкового продукта из растительного сырья формируется последовательностью технологических воздействий, а не только рецептурным составом. Для обоснованного выбора режимов переработки необходимо совместно оценивать микроструктуру, растворимость и агрегацию белка, гидратацию полисахаридов, реологию, текстуру, устойчивость при хранении и стандартизованную переваримость. Такой подход позволяет выявлять технологические компромиссы и проектировать процессы, в которых повышение выхода и требуемой текстуры не достигается за счет снижения пищевой доступности белка.
